Kerala Style Spicy Crab Curry – Njandu Curry Recipe

Ingredients:
4-5 medium-sized mud crabs (cleaned)
2 tbsp coconut oil
1 tsp mustard seeds
2 sprigs curry leaves
2 onions (thinly sliced)
2 tomatoes (chopped)
1 tbsp ginger-garlic paste
2 green chilies (slit)
1 tsp turmeric powder
2 tsp red chili powder
1 tsp black pepper
1 tbsp coriander powder
1/2 tsp garam masala
1/2 cup thick coconut milk
Salt to taste
Fresh curry leaves for garnish
How to Make!
Heat coconut oil in a pan. Add mustard seeds, let them splutter, then toss in the curry leaves.
Sauté onions till golden brown, then add ginger-garlic paste and green chilies. Stir until fragrant.
Add tomatoes, turmeric, red chili, black pepper and coriander powder. Cook until the oil separates.
Add the cleaned crabs, mix well, and cover. Let them cook for 12 – 15 mins
Pour in thick coconut milk, simmer for a few minutes, then sprinkle garam masala.
Garnish with fresh curry leaves, serve hot with rice and enjoy the coastal vibes!
