Kanak, the award-winning Indian fine-dining restaurant at Trident, Hyderabad, presents Beloved Bihar — An Heirloom Feast From Balua Deorhi, a five-day culinary showcase celebrating the lesser-known flavours and cherished food traditions of Bihar. From 21st to 25th September 2026, the restaurant welcomes Guest Chef Shubhra Singh, who brings to Hyderabad recipes from her ancestral village, Balua Deorhi, along with culinary traditions passed down through generations.

Led by Chef Ananya Khare, Kanak is known for its authentic approach to Indian cuisine and its exploration of regional culinary traditions. This showcase continues that journey, offering guests an opportunity to experience a more intimate side of Bihari cuisine—one rooted in the regions of Magadh, Nalanda, Mithila and Anga, and shaped by the food of the home.

While familiar Bihari elements such as litti and chokha find their place in the menu, the showcase goes beyond the staples to introduce diners to lesser-known dishes and flavours. Among the highlights is Katarni Gosht Pulao, made with the fragrant Katarni rice and tender mutton. A dish Chef Shubhra takes particular pride in calling a pulao, rather than a biryani, it is prepared in the traditional style to allow the mutton to develop an exceptionally soft texture while the rice absorbs its flavour.

Non-vegetarian highlights also include Bihari Mirchi Chicken, Kishanganj Kebabs and Mithilanchal Rohu. Vegetarian offerings include Aaloo-Parwal Chop, Drumstick Kebabs and Satnaja Roti, made using a blend of ancient grains. The exclusive menu will be served at Kanak in Trident, Hyderabad, from 21st to 25th September 2026, for lunch from 12:30 pm to 3:00 pm and dinner from 7:00 pm to 11:00 pm.
