Bacon – 5 Strips
Scallions – 3 stalks
all-purpose flour – 2 cups
Baking powder
Thyme – to taste
Garlic – 3 to 4 cloves
Salt – to taste
Smoked black pepper powder – 2 tsp
Buttermilk – 2 cups (add accordingly to adjust the consistency of the batter)
eggs – 2
cheddar cheese – 2 cups
Sunflower oil – 3 tbsp
Instructions to make
Cook the bacon until it’s golden and crispy.
Add the scallions, garlic and thyme to the bacon fat in the pan and mix to blend. Then roughly chop the bacon and add it to the scallions. Lightly season with salt and pepper and set aside.
In a large bowl, mix in flour with the baking powder, salt and pepper. In another bowl, whisk the eggs with the buttermilk. Then add the wet to the dry ingredients and whisk the contents to form a smooth batter.
Add in the bacon and scallion mixture, cheese and oil to the batter.
With a bit oil for each batch, add the batter to the waffle iron, using it according to the manufacturer’s instructions. (About ⅓ cup batter per waffle.)
Let the waffles cool and serve it with a warm cheese sauce.
